1. Slice onions crosswise and separate rings. Put in colander
2. Boil tea kettle. Pour over onions.
3. Mix other ingredients plus 1 1/2 cups water and several pinches salts in a bowl and stir to dissolve sugar.
4. Add the onions, submerging and placing plate on top to keep submerged. Add equal amounts vinegar and water if necessary. Let soak 15 or ore minutes.
5. Use or chill. Keeps several weeks in fridge in covered jar.
