Suggest a better descriptionCook rice according to package. Set aside, bring to room temperature. In medium frying pan, heat 1 tablespoon vegetable oil over medium heat, scrambled 2 eggs an season with salt and pepper. Scramble and break up into pea sized pieces. Chop scallions, red bell pepper, garlic, carrots and set aside in a bowl. Chop pork. After egg is scrambled add veggies and cook for about 5 minutes. Add rice, mix thoroughly and cook for another 5-7 minutes. Add pork and soy sauce, mix and cook for another 3- 5 minutes. add soy sauce to taste.
