Mom's recipe.
Trim fat from roast. Cut into large pieces. Flour and brown.
In a large pot, add roast, salt, pepper, water, onions and celery (plus any extra flour)
Cook for 1-2 hours until roast is tender.
Leave carrots and potatoes in big chunky pieces.
Add carrots and cook for 1 hour.
Add potatoes and cook for 30 minutes (or until potatoes are soft).
