Freeda Lefever made this at Christmas time for years.
1. In a large bowl, stir together 1-1/2 cups flour and yeast.
2. Barely heat together: milk, sugar and salt. Add melted butter to mixture. Add beaten egg when mixture has cooled. (If you add it too soon, it kind of scrambles the egg!)
3. Add liquid mixture to dry ingredients.
4. Add remaining flour until you get a moderately stiff dough. (Mom used 3 cups in all)
5. Knead 6-8 minutes. (You can use dough hooks on your electric mixer, if you'd like.)
6. Let rise to double.
(You can do this in your bread machine, if you have one. Use the dough cycle and take out at the end of the cycle.)
7. Punch dough down and let rest 10 minutes.
8. Roll dough to 1/4 inch thick, 25" x 10". Stretch to about 30" x 20" (this is almost impossible to do!!)
9. Mix filling ingredients together.
10. Spread filling to within 1/2" of edges all the way around.
11. Roll up, by long side, and seal the edges. Place on a greased cookie sheet, sealed edges on the bottom.
12. Let rise again, until nearly double.
13. Bake in a 350 degree oven for 30-35 minutes, until nicely golden brown.
You can shape the bread before you let it rise after filling it--you can curve it, do a wreath shape, or do a snail shape (give it room to rise!). You could also make two smaller loaves, if you desire, rather than one big one.
You can ice with a glaze: Mix almond flavoring, milk, powdered sugar OR mix lemon flavoring, milk, and powdered sugar. Glaze should be runny, and you can pour it over the still warm, but slightly cooled loaf. (Don't pour the glaze on the hot loaf right out of the oven. It just kind of slides off down the sides.)
