Pumpkin Bread Recipe can be baked in mini pans for 10 single servings or 3 regular bread pans
Mix wet ingredients in a large bowl. Stir in dry ingredients and mix until smooth.
Divide into 3 conventional bread pans*, greased and floured. Bake at 350 degrees for 30-35 mins or until done. (The bread will be very soft to the touch, even dough like at the top. It is actually done. It will harden up after you take it out of the oven, but not too much ;)
Cool slightly in pans then turn onto racks to finish cooling.
*My personal favorite is to cook the bread in 10 mini pans for 20-24 mins.
The bread is so moist and flavorful!
