Food Babe...can use green curry paste also
In a large Dutch oven, heat coconut oil over medium heat.madd onions and cook until soft. Add garlic and cook another 30 seconds. Add coconut milk, stock, bay leaf, thyme and red curry paste. Cook for another 15-20 minutes.
Take off heat and blend until smooth in a blender.
Place back on stove and add nutmeg. Heat until warmed through.
Serve with pumpkins seeds and chopped cilantro.
