Puttanesca Sauce is a spicy and robust flavoured sauce made with garlic, dried chilli peppers, capers, and anchovies as the main ingredients.
Cook the pasta in a large pan of rapidly boiling salted water until al dente. Drain, return to the pan, and keep warm. While the pasta is cooking, heat the oil in a large heavy frying pan, add the garlic, parsley, and chilli flakes and stir frequently, for about 1 minute, over a medium heat
Add the tomatoes to the pan and bring to the boil, reduce the heat and simmer, covered, for 5 minutes. Add the capers, anchovies, and olives and stir for another 5 minutes season, to taste, with freshly ground black pepper.
Add the sauce to the pasta and toss gently until tine sauce is evenly distributed serve immediately with freshly grated Parmesan
