Suggest a better description1. Prepare ingredients. Peel onion, mince, and halve. Rinse chives and slice. Mince garlic. Wipe mushrooms and pat dry. Slice mushrooms. Pick thyme leaves, discarding stems.
2. Cook quinoa. Combine onion, quinoa, water, and pinch of salt in medium pot. Bring to boil over high heat, then reduce heat and simmer until water evaporates and quinoa is tender, about 10m. Remove pot from heat and set aside.
3. Sauté mushrooms. While quinoa cooks, heat butter in a medium pan over medium-high heat. When butter is foamy, add mushrooms and sauté until softening, about 5m. Add thyme and cook until golden, about 3m. Add salt and pepper to taste. Remove from heat and set aside.
4. Form patties. In large bowl, combine quinoa, half of chives, bread crumbs, garlic, grated cheese, and egg. Form into 4 large or 8 small patties.
5. Cook patties. Heat oil in nonstick pan over medium heat. When oil is simmering, add patties and cook until browned and warmed through, about 4 minutes per side.
6. Serve. Reheat mushrooms on the stovetop, 1m. Plate patties, garnish with mushrooms and chives.
