Ingredients

2 cups cooked pumpkin
1 cup water or chicken broth
2 tablespoons dry sherry
0.5 teaspoon kosher salt
0.25 teaspoon freshly ground black pepper
1 pound cheese ravioli
2 tablespoons toasted pumpkin seeds; for garnish

Servings  

Preparation

Bring a pot of salted water to a boil for cooking ravioli and cook as directed.

Meanwhile place the cooked pumpkin in a small pot, add water, sherry, salt and pepper. When the mixture is heated through, puree, adjust consistency and keep warm.

Drain cooked ravioli and serve with sauce. Garnish with the toasted pumpkin seeds.

I made this with canned pumpkin, added a little parm cheese & a dash of milk --still was missing something (possibly fresh squash).

Any type of Winter squash may be used in place of the pumpkin such as Acorn or Butternut. [I posted this recipe.]
