Quick recipe for side or main. Sweet and nutritious. The main ingredients aren't exact, I just had extra laying around.
Set oven to 375.
Arrange sweet potatoes in single layer. Drizzle with EVOO, cinnamon, salt and pepper. You will probably want to brush the cubes to ensure all are covered. Cook for 25-30 min until tender.
Cube the apple and cook (covered) in EVOO, 1 tsp cider vinegar, salt and pepper until tender, about 3 min. Add kale and 1tsp cider vinegar. Coin until tender, about 4 min.
Top kale with potato pieces to serve.
