Suggest a better descriptionUsing a vegetable peeler, remove a strip of peel from the center of each potato. Set aside.
Heat butter in large skillet over med-high heat until melted. Add potatoes, salt, and pepper and stir until coated. Cover skillet with lid and cook 10 min. Every 3 min, hold lid down on skillet and swirl in circular motion to move potatoes around.
After 10 min, turn heat to high and continue to swirl every 3 min until potatoes are tender and golden brown, about 8-10 min. Add half the green onions to pan and swirl one more time to combine. Cook for 1 min. Garnish with remaining green onions when serving.
May decrease heat to medium to start, then increase to med-high.
