Add zucchini and onions. Let sauté for 10-15 minutes, or until slightly softened.
Add the garlic. Let sauté for an additional 2 minutes.
Add the tomatoes and stir combine. Continue until warm and tender.
Sprinkle with kosher salt to taste. Remove from heat.
Sprinkle with cheese and serve.
