Cook ground chuck, season with salt and pepper to taste. Drain beef. Put in stock pot.
Chop 2 medium onions. Put half raw onion into stock pot.
Peppers cut off end caps, chop shallots and place in food processor. Lightly chop.
Saute other half onion and peppers until onions translucent.
Put peppers and onions in stock pot.
Cook sausage. Put in stock pot.
Add sugar and Tabasco
Stir together contents. Cook covered on medium heat for 4 hours.
If sticks to bottom of pot reduce heat.
