A shepherd's pie with a delicious twist on the potatoes. This is my first recipe and most of the amounts can be eyeballed and estimated.
Equipment:
Small, medium, large sauce pots
Spoons for gravy and ground beef
8x8x2 Square Glass dish (oven safe)
Large bowl
Potato Masher
Electric mixer (freestanding or hand held)
Preheat oven to 350F
Start with the gravy (ingredients: 1/2lb butter to celery)
1. Saute the celery, onion, and carrot in some of the butter in a small sauce pot
2. Melt about 1 tbs of butter
3. Remove from heat and add flour SLOWLY stirring out lumps to make an almost sandy mix
4. Return to medium low heat to cook the flour for about 5 mins or until it is light brown
5. Add heated stock/broth SLOWLY stirring out the lumps to make a smooth liquid, it should not be too thick nor should it be like water, add worchestershire sauce to taste
6. Bring to a boil, reduce heat and simmer until reduced and fairly thick
Ground Beef (ingredients: 1/4 small onion-canola oil)
1. Brown the ground beef in oil in a large sauce pot
2. Add onions and cook about 5 mins
3. Add corn and finish cooking
4. Add gravy and mix well
5. Spread out in the bottom of the square glass dish
Bistro Potatoes (ingredients: potatoes-sour cream)
1. Boil potatoes until soft
2. Drain, mash, and place in large mixing bowl
3. Mix with electric mixer until smooth
4. Add cheese, sour cream, paprika, cayenne pepper, chives, bacon, and 35% cream
5. Add cesar salad dressing to taste
Spread potatoes over ground beef in glass dish, put into oven at 350F
Do not over cook the flour
Do not add flour to a bare pot bottom, as it will stick and burn
Look up how to make a roux
When adding cream into the potatoes mix on low speed to avoid splatter
