Paleo or traditional, depending on if you use beans/rice!
Chop meat into edible chunks. Place a bit of cooking oil of your preference, the juice of the lime, and the seasoning and salt/pepper in a plastic bag and add meat to this mixture. Seal well and mix till meat covered with liquid/seasonings. Place in fridge. Chop veggies and set them aside. Prepare beans and tortillas for heating.
On medium heat, cook the marinated meat till close to done. Remove meat from pan and add veggies into same pan. (I don't clean mine because I like all the seared bits that add flavor.) Cook veggies til almost done and add meat back in, while also heating beans and tortillas. When all is done, serve hot.
Many would add a Mexican-inspired rice to this meal and it would certainly be good, but I'm a pretty low carb cook.
