Sour cream mashed potatoes


2 pounds red potatoes; quartered
1 cup sour cream; (8 ounces)
2 tablespoons fresh parsley; minced
1 teaspoon Salt
1/2 teaspoon garlic powder
1/2 teaspoon Pepper

Original recipe makes 5



Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and simmer for 15 - 20 minutes or until tender.

Drain and transfer to a large bowl. Add the remaining ingredients, beat until blended.

Used chives instead of parsley. Good flavor but a little dry. Needed some milk maybe.
