I'm off wheat & processed sugar, so I adapted a recipe I found here, Double Chocolate Banana Muffins (id 180633) which looked great & used spelt flour and maple syrup. They turned out great!
1. In a large bowl, combine the first five ingredients.
2. In a small bowl, combine the remaining ingredients.
3. Gently stir the second mix into the dry ingredients until just moistened.
4. Fill greased or paper-lined muffin tins until 3/4 full.
5. Bake at 350F for 25 min or until muffins test done.
You can hardly taste the banana. If you want more banana flavour, you can increase how much you add, but please compensate by lowering at least one of the other liquids. When you use liquid sweetener you have to be very careful how much liquid you use.
