Great recipe you can cook in a Dutch Oven.
1. Preheat oven to 325 F (170 C). Trim excees fat from lamb shanks. Peel eggplant, cut into quarters lengthwise, then slice into 1-ince (2.5cm) pieces. In a large dutch oven or ovenproof pot over meium high, heat 2 tbsp (25ml) olive oil and brown shanks on all sides, about 5 minutes. Remove to a plate.
2. Lower heat to medium. In the same pot, add a little more oil, if needed, and saute onions for 2-3 minutes untilthey begin to brown. Add eggplant and garlic and saute until eggplant softens and begins to lose its opacity, about 6 minutes. Add paprika, cumin, cinnamon, ginger and cayenne; mix well. Return shanks to dutch oven, nestling them in the vegetable mixture. Add tomatoes with their juices, breaking them up a little, and sprinkle with salt. If necessary, add enough water to cover shanks with liquid. Bring to a boil over high heat, then cover and place pot in the oven. After 1 hour turn shanks and tuck prunes in among them. Return to oven for another hour, or until meat is so tender it nearly falls offf the bone. Let cool before refrigerating overnight.
