Baked peppers with a kick!
Preheat oven to 350 degrees F (175 degrees C).
Get peppers, cut open, and clean out insides. Note: if you do this in a toaster oven, slice them open lengthways so the tops won't be so close to the top and burn.
Bring a large pot of water and 1 tablespoon salt to a boil; cook bell peppers in the boiling water until slightly softened, 2-3 minutes. Drain.
Heat olive oil in a skillet over medium heat; cook and stir onion in the hot oil until softened and transparent, 5 to 10 minutes.
Mix rice, tomatoes, and cooked onion in a large bowl. Add chili powder, garlic powder, salsa, cumin, 1/2 teaspoon salt; stir until evenly mixed. Mix 1 1/2 cups Mexican or other spiced shredded cheese into rice mixture. Spoon rice mixture into each bell pepper; arrange peppers in baking dish. Sprinkle peppers with remaining Mexican or spiced cheese.
Bake in the preheated oven until cheese is melted and bubbling, about 20-30 minutes. Put a dollop of sour cream on top.
Don't boil the peppers over 3 minutes or you'll grt mushy peppers! For variety, add corn or other vegetables. Also, if you're having people in, try having all the different colours of bell peppers just for fun. If you have small peppers, use more of them of course. Finally keep an eye on them baking and don't let them burn! Tops burning? Cover with tin foil.
