The name comes from a friend who misunderstood the waitress at the restraunt where we first tasted this kind of soup.... she said 'spicy' peanut soup, but Bryan swore she said 'spider'.
Dry hummus mix can be found in bulk food sections or boxed in the international foods section. It works great for thickening soups and adding some additional flavor without using any flour... great for anyone with wheat allergies.
Place all ingredients (except for bell pepper, white beans and garbanzo beans)in large soup pot. Stir well to mix in peanut butter. Bring to boil. Reduce heat to low and simmer for 30 minutes. Remove chicken breasts to a bowl or cutting board and shred the meat using two forks. Place shredded chicken back into soup. Add bell pepper and drained beans. Simmer on low for additional 30 minutes.
If soup is not as thick as you would prefer, gradually sprinkle hummus mix over surface and mix well to avoid clumps. Add the hummus mix gradually, a few tablespoons at a time, allowing the soup to thicken a few minutes between additions.
