Can be prepped ahead and filling added just before serving
Preheat oven to 220 C. Mix flour, salt, sugar, cinnamon, zest and baking powder. Rub butter into dry ingredients with fingertips till it resembles fine breadcrumbs. Mix egg and cream and then mix quickly and lightly just till mixture comes together in a ball. Dough should be soft and sticky but no collapsing. Spread on to floured surface and using fingertips press out to 3 cm thickness. Cut rounds with 6 cm cutter and place on lightly oiled baking tray. Push dought together without kneading and repeat with remainder of mixture. Bake 10 - 15 min till well cooked. Cool completely. Split each shortcake inhalf then sandwich together with strawberry ham, plenty of strawberry halves and a dollop of mascarpone. Dust with icing sugar and serve immediately
