Pasta shells stuffed with ground beef and cheese mixture
1. Cook pasta shells
2. Peel & chop onion. Cook ground beef & onion in skillet over med-low heat for 5-6 min. Stir occasionally. Drain.
3. Stir chili powder, cream cheese, & 1/4c taco sauce into beef skillet. Heat over med-low heat 2-3 min until cheese is melted. Remove skillet from heat.
4. Heat oven to 350 degrees
5. Drain pasta shells. Fill shells with beef mixture with about 2 Tbsp for each shell. Place filled shells in pan. Pour 1/2c taco sauce over the shells.
6. Cover with aluminum foil & bake 20 min. Remove from oven, sprinkle Colby Monterey Jack cheese & corn chips over shells. Bake uncovered 10 min. Garnish pasta with sour cream & green onions.
