All of the great flavor you love about chicken casserole recipes is piled into a delicious casserole form in this super simple recipe for Surprising Chicken Salad Casserole. Why is it so surprising, you ask. This yummy casserole recipe features crushed potato chips on top to give it that extra bit of crunch to make it a completely memorable meal.
1. Preheat oven to 325 degrees F.
2. In a large bowl, mix mayonnaise and lemon juice until smooth.
3. Add chicken, celery, rice, almonds, onion and pimientos; mix well.
4. Spoon mixture into a greased 13 x 9 x 2 inch baking dish. Sprinkle with cheese and crushed potato chips.
5. Bake, uncovered, for 30-35 minutes or until bubbly.
