Scandinavian delight
MEATBALLS
Preheat oven to 250 degrees F.
In a bowl combine the 1 teaspoon kosher salt, 1/2 teaspoon black pepper, 1/4 teaspoon ground allspice, 1/4 teaspoon nutmeg, 1/4 cup parsley, dill, eggs, mix and set aside.
Combine bread crumbs and 1/4 cup milk. Set aside.
In a 12-inch skillet pan over medium heat, melt 1 tablespoon of butter with a pinch of salt.
Add the onion and cook until the onions are translucent.
Remove the onions from the heat and set aside.
In the bowl of a stand mixer, combine the bread crumbs spices and onions.
Beat on medium speed for 1 to 2 minutes. Longer will make the meatballs tough.
Weigh meatballs into 1-ounce portions, using your hands, shape the meatballs into rounds. and place on a sheet pan.
Heat the shortining in the skillet over medium-low heat.
Add 1 tablespoon of shortining
Add the meatballs and cook, not to many at once or it will be hard to turn them, until golden brown on all sides, about 7 to 10 minutes.
Remove the meatballs, return to sheet pan and place in the warmed oven.
Repeat until all the meatballs are browned.
When the meatballs are fully cooked (160 degrees), remove from the oven, cover with the gravy and serve.
SAUCE
Combine flour and spices
Melt butter
Decrease the heat to medium and add the flour to the pan
Whisk approximately 3 minutes
Add wine
Add heavy creamy and whisk
Gradually add the beef stock and whisk until sauce begins to thicken.
Continue to cook until the gravy reaches the desired consistency, adding stock as necessary
Do not use freeze dried onions, they result in a bad consistency.
you ca use a scoop for meatballs instead of weighing. Dip in water in between meat balls to prevent sticking
