A lebanese speciality, tabbouleh is a mixture of bulgar (cracked wheat), fragrant herbs and lemon juice. Simplicity itself to make, it can be used immediately or will keep happily in the fridge for up to two days if covered with cling film.
Place the bulgar in a bowl and pour over enough hot water to cover. Set aside for 30mins, or according to the packet instructions, then tip into a sieve and rinse well under cold running water. Drain thoroughly and tip into a bowl.
Pre-heat the oven to 200 deg C / 400 deg F / Gas Mark 6 from cold. Place 1 tbsp of the oil in a small roasting tin and half the garlic, half the lemon and all the cumin. Add the salmon fillets, turning to coat, then arrange skinned-side down and roast for 10-12 mins until cooked through but still moist inside.
Meanwhile, make a dressing by placing the remaining lemon juice in a screw-topped jar with the rest of the garlic and all the cinnamon, allspice and sugar. Season to taste and shake until the salt has dissolved. Add the remaining 3 tbsp olive oil and shake again until well combined.
Add the tomatoes, parsley, mint, and onions to the drained bulgar, then pour over the dressing and stir gently until well combined. Season to taste and set aside at room temperature, while the salmon cooks, to allow the flavours to develop. Serve the salmon with a little of their juices and offer the tabbouleh separately.
