Tom Ka Gai (Thai Chicken Coconut Soup)

Our family loves this soup. It seems to help fight colds or at least cold symptoms, but we like it anytime, not just when we're sick!

"I made it without spices since I don't like spices food. It turned out really good, though next time I may add some more ginger and garlic to add some flavor. Easier than I thought it would be to make."

Ingredients

1 pound boneless, skinless chicken; sliced in thin strips
1/2 cup mushrooms; sliced (up to 1 cup)
1/2 cup celery; sliced, (up to 1 cup)
2 jalapenos; sliced
3 teaspoons Vegetable oil
2 14-oz cans coconut milk
2 cups Chicken broth
2 teaspoons ginger root; minced or grated
1/4 cup Fish sauce
3 teaspoons Fresh lime juice
1/4 cup sugar; (or Splenda)
1/4 teaspoon Cayenne pepper
Salt; to taste
1/4 cup Fresh Cilantro; chopped

Original recipe makes 6 Servings

 

Preparation

1. Saute chicken with mushrooms, celery, and jalapenos in the vegetable oil. Cook for 2-3 minutes until the chicken turns white.

2. In a soup pot, bring coconut milk and broth to a boil. Reduce heat. Add the partly cooked chicken, ginger, fish sauce, lime juice, sugar, cayenne, and salt. Simmer until the chicken is done, 10-15 minutes.

3. Sprinkle with fresh cilantro and serve.

Fantastic soup full of tummy-warming goodness. Next time, I'll add even more mushrooms and maybe another cup of veggies. 3 chicken breasts is the perfect amount.

So good - served it over rice. Small amounts of other vegetables can be added - eggplant, peppers, squash, potatoes. I added a couple of cloves of garlic as well.

Loved this! I substituted pickled red Tabasco peppers for the jalapenos, & added a 1/2 cup more chicken broth & 1 more 13.5 ounce can coconut milk. I love anything with fish sauce & this recipe really balances everything. Delightful!

This recipe is FANTASTIC. I add other veggies to it sometimes and serve it with rice. Use light coconut milk. It's a third of the calories and the same deliciousness.

I did not add the recommended amount of sugar and totally omitted the celery. Mainly because I don't like cooked celery. I added 3 spoonfuls of sugar instead and kicked up the heat with more cayenne. This was delicious and super easy. It's definitely going on my roster of soups from now on! Delish.

Super easy and great as soup or over rice. I can't have fish sauce, so I mixed soy sauce and a tablespoon of hoisin sauce together. I will for sure make this again!!
