Easy and Delicious!
In a large pot, slowly sauté garlic in oil. Add chicken broth, French onion soup, tomatoes and v-8 juice. Cover and bring to a boil. Lower heat and simmer 15 to 30 minutes. Fry or bake tortilla strips at 350 degrees for 15 to 20 minutes until crisp. To serve, put tortilla strips in bowls, ladle in soup, then top with generous helping of cheese on top. Garnish as desired with avocado and fresh cilantro.
