Suggest a better description1. Disjoint chicken, cover with cold water. Bring to a boil, cover, and simmer 1 hour. Let cool in the broth to handle easily. Skin, bone and shred. Skim fat off broth and freeze.
2. Saute onion and garlic in oil until soft. Add tomatillos, vinegar, salt and pepper and oregano. Bring to a boil, lower heat to medium and cook 5 minutes to reduce liquid.
3. Add chicken and continue to cook uncovered approximately 10 minutes. Reduce heat to low to keep filling warm. Do not allow to cook too dry.
4. Preheat 1/2" oil in frying pan, 400-425 degrees.
5. Heat the tortilla only to soften. Fill with approximately 2 teaspoons of the prepared meat mixture. Roll tightly and secure at both ends with toothpicks.
6. Lightly salt and fry in oil until golden, but not too crisp. Drain on paper toweling. Remove toothpicks.
7. On a large serving platter or individual plates, place 2 or 3 flautas per serving on a small bed of shredded lettuce. Top with guacamole sauce.
8. Flautas may be made in advance and reheated in a 350 degree oven for 10-15 minutes. They freeze well.
9. Makes 24 flautas.
