Suggest a better descriptionPut all the fruit into a large saucepan and cover with the pineapple juice. Add the cinnamon stick and bring to the boil. Simmer for 15 minutes or until the fruit is soft. Leave to cool for at least 1 hour. Add the Tia Maria and reheat gently. Transfer to a sealed container and leave to macerate for several hours to enrich the flavours.
