Suggest a better descriptionIf using dried beans, rinse and pick over them. Put the beans in large pot, add cold water to cover the beans by 3 to 4 inches, and soak overnight.
Thoroughly drain the beans and return to the pot. Cover with water by 2 to 3 inches and bring to a boil over medium heat. Decrease the heat to low and simmer, stirring occasionally, for about 1.5 hours, or until the beans are soft enough to mash easily with the back of a spoon. Remove from the heat,
Transfer three-fourths of the beans to a blender and ladle in a generous spoonful of the cooking liquid. Add the roasted garlic. Pulse on high speed until the beans are blended but still chunky, adding more cooking liquid if needed. Drain the remaining beans and set aside, reserving 1 cup of the cooking liquid.
In a heavy saucepan, heat the olive oil over medium heat and saute the onion until golden brown, about 5 minutes. Stir in the tomatoes, rosemary, and thyme and season with salt and pepper. Decrease the heat and simmer for another 5 minutes. Add the reserved whole beans and simmer for another 5 minutes. Add the blended beans and stir to combine thoroughly. If the soup seems too thick, add a few tablespoons of the reserved cooking liquid. Simmer for 10 to 15 minutes to combine the flavors.
Ladle the soup into warmed shallow soup bowls and drizzle a generous tablespoon of pesto over each. Serve immediately.
