Indian rice dish.
1. Heat the oil in a medium sauce pan. Add rice and cloves and saute for 2-3 minutes.
2 Add salt, sugar and pepper. Stir and then add 1 1/2- 2 cup hot water. Stir well.
3. Bring to a simmer and lower the heat to the lowest setting.
4. Cover with a lid and do not stir until small steam holes form on top of the rice.
5. Shut off the heat and place piece of stale bread on top of the rice. Cover the tightly and remove from the heat and let sit for 10 minutes.
6. To serve: discard the bread. Fluff the rice with a fork and add plumped golden raisins and cilantro. Serve warm.
Side note:
To plump raisins: Place 1 cup of raisins in a bowl and add 1/2 cup boiling water. Cover with plastic wrap and allow to stand for 10 minutes. Can also heat the water using a microwave.
