Lamb chops and basmati rice featuring V8 garden cocktail as both a sauce and a stock
In a medium sauce pan combine 1/2 cup of Basmati (or long grain) rice with 1/2 cup of V8 garden cocktail (low sodium) and 1/2 cup of water. Bring to a boil then reduce heat to minimum covered for 20 minutes or until all moisture is absorbed by the rice. remove from heat.
In a skillet sauté one diced onion in one tablespoon of olive oil on medium heat until slightly browned. (approximately 7 minutes)
add two cloves of minced garlic and sauté for another 2-3 minutes and remove from pan.
Season lamb chops with a pinch of salt and pepper, then dust with one teaspoon of corn starch. Add one tablespoon of olive oil to pan and raise heat to medium-high. Sear lamb chops for 3-5 minutes per side. Return sautéed onions and garlic to pan. Add a teaspoon of rosemary leaves and 1/4 cup of V8 garden cocktail (low sodium) and simmer for ten minutes on medium-low heat. Turn chops to cook evenly and mix the sauce. Remove from heat and let sit for five minutes to rest the meat and allow sauce to thicken.
Fluff rice with a fork when ready to serve.
