This is a hardy veggie/beef soup that is a huge hit with my family and so easy to make in the crock pot on those cold winter days!
Brown the beef with onion in a frying pan, then drain. Add beef & all remaining ingredients to Crock pot. Add 2-3 cups water if needed. Cook on low all day (about 5-7 hours until veggies are tender). Stir occasionally. Add salt & pepper to taste. Great served with cornbread!
