Put first 3 ingredients in a small bowl for 10 minutes. Then add next 4 ingredients. Gradually add 11 cups flour and mix really well. Put into a large greased bowl and let rise for 1-1.5 hours. Punch down well and let rise for 1-1.5 hours again. Cut into 5 pieces, shape into loaves and let rise until doubled in bulk- about 1.5 hours. Bake at 400 degrees, dropping temperature to 375 degrees for 1/2 - 3/4 hour.
