There is nothing like cooking a whole chicken on the big green egg. It comes out smokey and juicy. It is easy and feeds a nice size group.
Remove chicken from refrigerator at least 30 minutes before you are ready to begin.
Bring Big Green Egg (BGG) to 350 - 375 degrees with plate setter sitting on the firebox, legs up (no grate)
Was chicken with water and make sure your remove any of the stuffing material from inside the chicken
Rub chicken down with olive oil and then shake the Montreal Seasoning all over the chicken, the more the better, even put it inside the chicken
Place the chicken on a BGG v-rack and place that in a disposable aluminum cooking pan
Fill the aluminum pan about a 1/2 inch with water
Cook on the BGG until a cook thermometer reads about 160 - 170 when stuck deep in the space between the drumstick and the body. I guess that's like the chickens groin area. I usually start checking the temp around 45 minutes. Once I get a reading of 140 I will take and put aluminum foil over the chicken, anchoring it on the v-rack. That helps bring the internal temperature up quicker on the chicken. A typical chicken is usually done in about an hour.
After you remove from the BGG, let stand for 15 minutes, then slice it up and enjoy.
Make sure your water does not evaporate completely out of your pan.
You can also add smoke to your BGG as well, apple chips or pecan are good with chicken.
If you like BBQ chicken you can do all the same but instead of Montreal Seasoning, use your favorite BBQ rub for poultry. I like Emeril's. Then baste with BBQ sauce starting around the 45 minute mark.
