This is good.
White flour ingredient is really 4-5 cups. But as needed.
Soften yeast in ¼ cup water. Combine hot water, sugar, salt and shortening. Stir in whole wheat flour. Beat well. Add yeast. Add enough of white flour to make moderately stiff dough. Knead til smooth; 10-12 minutes. Let rise til double (1 ½ hrs). Punch down. Cut in 2 and let rest 10 minutes. Shape and put in 2 greased loaf pans-let rise til double (less than 1 hr). Bake in 350 F oven 50 minutes. Cover in foil last 20 minutes if browning too fast.
