Carrot muffins with applesauce to keep muffins moist and low fat. Makes 12 regular muffins.
Preheat oven to 375 degrees F. Line muffin tin with paper cups or grease lightly.
In a large bowl, stir together dry ingredients until combined.
In a medium bowl, whisk together eggs, carrots, applesauce, oil and almonds (if using) until combined.
Add the wet ingredients to the dry ingredients and gently stir until just moistened.
Spoon batter into the prepared muffin tin and bake for 20-25 minutes, or until the tops spring back when lightly touched.
