This recipe is amazing! It is easy and you get 3 pizza doughs out of it. You can refrigerate them for a week or freeze them for months. I find that making pizza doughs a few days ahead of time gives them even more flavor. The flour is 26oz by weight. This helps with measuring sometimes.
Put your flour (Already in the mixing bowl) and water (In a 2 cup measuring cup) in the fridge a few hours before you are going to make the pizza dough so everything is chilled.
When you are ready to bring the dough together. Take the flour and water out of the fridge.
Add other dry ingredients to the mixing bowl.
Add olive oil to measuring cup with water.
With paddle attachment on your stand mixer, slowly add water/oil to dry ingredients on medium/low speed until ingredients start to stick together and form a sticky ball.
Once ball is formed, change attachment to dough hook on stand mixer. Kneed with mixer on medium speed for 10 minutes. After 10 minutes you should have a smooth/sticky ball of dough.
Divide dough into 3 even balls (about 15oz each) and place in ziplock bags (spray inside of bags with no-stick spray)
Place dough balls in fridge. They can be used almost immediately however, 24 hours to several days is preferred for flavor and texture.)
Take doughs out of fridge 3 hours before you are ready to make pizza.
Sprinkle flour on work surface and slow stretch doughs working from the center out. This recipe makes a very tender and stretchy dough so work slowly and carefully or you will make holes in dough.
Once stretched out, put dough on pizza paddle lightly dusted with flour, add favorite ingredients and place on a pizza stone in a 500-550* oven until done. Typically 8 to 15 minutes.
