Delicious side dish! Healthier than traditional mac and cheese but just as tasty!


1 Zucchini; large
1 cup mild Cheddar cheese; grated
1 cup sharp Cheddar cheese; grated
3 tablespoons Butter
1 tablespoon garlic; minced
1 Jalapeno pepper; finely chopped
Salt & pepper; to taste
1 tablespoon onion flakes

Original recipe makes 6 Servings



Melt butter in a large frying pan. Grate zucchini into pan and cook at a medium temperature until it is soft. Stirring occasionally.

Add the cheese and stir until melted.

Add the jalapeno, garlic, onion flakes and salt and pepper. Cook for about 5 more minutes, stirring often to keep the cheese from sticking to the bottom.


We often experiment with different kinds of cheeses (pepper jack, mozzarella, etc). You can use more or less cheese to suit your taste and also add many different toppings. Sometimes we even add sausage!

I loved this recipe. Thank you. Really easy and quick to make. Delicious. Even with crispy onion flakes and generous portions it is only 5g carbs per serving. Be careful how much jalapeño chilli you use!

OMG. Yum. It's not Mac and cheese, but it's a great idea, and has nutritional value. Yum yum yum. I don't see why I couldn't make this with tiny cauliflower or broccoli florets, too.

Very quick and easy. Next time I will use half the amount of butter, probably around 1 1/2 tbsp instead.
