Delicious side dish! Healthier than traditional mac and cheese but just as tasty!
Melt butter in a large frying pan. Grate zucchini into pan and cook at a medium temperature until it is soft. Stirring occasionally.
Add the cheese and stir until melted.
Add the jalapeno, garlic, onion flakes and salt and pepper. Cook for about 5 more minutes, stirring often to keep the cheese from sticking to the bottom.
We often experiment with different kinds of cheeses (pepper jack, mozzarella, etc). You can use more or less cheese to suit your taste and also add many different toppings. Sometimes we even add sausage!
