Heat oven to 325 degrees. Mix together eggs, sugar and oil; beat thoroughly. Stir in zucchini.
Sift together flour, baking powder, salt, soda and cinnamon. Mix well. Stir in vanilla. Add nuts if desired.
Pour into 2 greased and floured 8x4 inch loaf pans. Bake for 50-60 minutes and do the toothpick test. Cool before slicing.
