Whisk together water, yeast and sugar. Let stand 10 minutes or until foamy. Combine 5 cups flour and salt. Make a well in the center. Pour yeast mixture and olive oil into well. Stir with a wooden spoon until combined. Knead 12 - 15 minutes (with remaining flour). Shape dough into a ball and place in a large greased bowl, turning 1 time. Cover and let rise in a warm place for 30 minutes, until doubled. Punch dough down. Divide in half. Cover and let stand 10 minutes.
Grease 2 sheets. Flatten dough round 6 inches. Cover and let rise in warm place for 30 minutes. Preheat oven to 400°F. Bake 10 minutes. Cover with foil, bake 10 - 15 minutes more. Cool 30 minutes. Split each loaf horizontally.
Preheat broiler. Brush with pesto, top with garlic and cheese. Broil 4 - 5 inches from heat for 2 - 3 minutes.
