1. Cube pork belly
2. Season half with just salt and pepper, the rest with blue’s hog
Cook:
1. Smoke for 2 hours at 225°
2. Place in aluminum pan
3. Top with brown sugar and butter
4. Place pan back on smoker or in oven for 1-2 hours to a temp of 205°
5. Prepare glaze (BBQ Sauce, apple juice, apple jelly, frank’s hot sauce) by mixing and simmering.
6. Drizzle and coat
7. Smoke for 5-10 minutes
Serve:
Can serve with rice, baked beans, fruit, corn, salad, etc.
