Acorn Squash stuffed with veggies and meat!
Squash Directions
1. Preheat oven to 425
2.Cut acorn squash in half and scoop out seeds.
3. Drizzle olive oil, salt, and pepper inside and place inside face down on a baking sheet.
4. Bake for 45 minutes or until fork can poke through skin easy.
5. Once finished, take out and let sit for 5 minutes.
Stuffing Directions
1. Add chopped onion, garlic and 1 tbs olive oil to pan on medium heat. Cook until onions almost clear.
2. Add mushrooms and ground meat. Cook until meat is brown
3. Add can of tomatoes and spinach, cover, and reduce heat to low.
Place acorn squash half in bowl and scoop in 1/2 of stuffing into Acorn Bowl. Enjoy :))
