Great Wheat Bread
Add yeast to the warm water and allow yeast to bloom for 10 min
combined flower and set aside
in a sauce pan add the Salt, Sugar, Butter and milk, heat to Aprox. 110 deg to dissolve the sugar and salt and to melt the butter "do not allow it to boil"
in the mixer with the paddle combined 1/2 of flower with yeast water and mix for one min. then add the rest of the liquid and the eggs mix until well incorporated then switch to the dough hook and add flour 1/2 cup at a time until fully incorporated
place dough in a greased large bowl cover with plastic wrap then with a towel place in a warm area and allow to rise for about 1 hour or until doubled. then punch the dough split in half and form 2 loaves, put the dough in to pans cover lightly with plastic wrap and then a towel and allow the dough to "proof" (allowing the dough to rise a second time again for about 1 Hour or until doubled)
heat oven to 400 deg. and bake for 35 min.
de-pan loaves immediately and place on cooling rack
cool the loves for at least 4 hours before bagging
