01. To cut your steaks, place a head of cauliflower stem side down on a cutting board. Using a large knife, slice it down the very middle. Then cut down again on each half to create 3 or 4, 1 inch thick slabs. Chop up the rest into bite sized pieces.
02. Bring a large pot of salted water to a boil. Place cauliflower in pot, let boil return, wait about a minute, then transfer to let it cool. Sprinkle with salt and pepper. Leave out for 30 mins or into fridge to cool.
TO MAKE THE BREADING
01. Combine all of the dry ingredients together in a bowl.
02. Combine all of the wet ingredients in a separate bowl.
03. Working one piece at a time, coat the steaks and florets evenly in the dry mixture, tapping off any extra.
04. Pour 3 tbsps of the wet mixture into the dry mixture and combine.
05. Working 1 piece at a time, dunk the steaks and florets into the wet mixture, then pack the moistened flour firmly around it.
06. return the battered cauliflower to where you cooled it and place in fridge to chill for 30 mins.
TO AIR FRY THE CAULIFLOWER
01. Spray the cauliflower steaks evenly with cooking spray. Place into the air fryer at 400 degrees and cook for 10 minutes, flipping the slabs halfway through. Cook until golden brown all over.
02. Place buffalo sauce into a bowl, then carefully turn the steaks around in the bowl to coat. Place back into air fryer on each side for 3-4 mins, or until crispy.
03. Repeat the process with the florets. Time will be less with florets.
04. Serve immediately on toasted bun.
Can be made beforehand and reheated in the air fryer at 400 for 5-7 mins per side.
