These meatballs are fantastic in Allen's Italian Marinara Sauce. You can make meatball sandwiches or serve them over a bed of capellini with a side of garlic toast.
1. Put bread crumbs and milk in a large bowl, stir so breadcrumbs absorb the milk
2. Add egg yolks, cheese, and all of the spices to the bowl and stir until well mixed
3. Add the meat and mix together well.
4. If the mixture doesn't hold together well, mix a couple more tablespoons of bread crumbs
5. Preheat oven to 410 degrees
6. Get a large bowl with water to dip your hands in. The meat mix doesn't stick to wet hands. You'll want to dip your hands in frequently as you form the meatballs.
7. Form the meatballs using about 2 tablespoons of meat mix and place on parchment paper lined (or lightly oiled) baking sheet or 9X13 pan.
8. If you will not be putting the meatballs in Allen's Italian Marinara Sauce, then cook the meatballs for 10 minutes, turn over and bake an additional 10 minutes, until they are no longer pink in the middle.
9. If you will be putting the meatballs in Allen's Italian Marinara Sauce, then cook the meatballs for 10-12 minutes or until browned. Then add to Allen's Italian Marinara Sauce and simmer for 10 to 15 minutes.
You can substitute "Italian Seasoning" for the spices.
Ground Chuck is better than ground beef for shaped foods like burgers and meatballs.
Instead of baking the meatballs, you can brown them in a little oil in a skillet. Make sure to brown them on all sides and cook until they are firm and cooked through, about 15 minutes.
