Cut each fillet into 3 strips (I left them whole).
Pour coconut milk into a shallow container.
Combine almonds, flour, Italian seasoning, garlic salt and lemon pepper in a shallow dish.
Dip salmon strips in coconut milk, and then coat with almond mixture. Place strips on a rimmed baking sheet. Bake 20 minutes or until salmon flakes with a fork.
