Suggest a better descriptionMelt butter in a medium saucepan. Add apples; cook over low heat until soft but not browned. Add berries; cook until tender.
Press fruit through a sieve. Return puree to saucepan; stir in sugar, tapioca and lemon peel. Beat in egg yolk; simmer 5 minutes or until thickened, stirring constantly.
Spoon pudding into 6 serving dishes. Whisk egg white until stiff peaks form; fold into whipped cream. Spoon cream mixture on top of each pudding. Serve chilled.
* you can omit the egg white and just serve with whipped cream.
