A great muffin. The very best of its kind.
Preheat oven to 425 degrees Fahrenheit. Combine dry ingredients and add milk, egg substitute, honey and oil. Mix until just moistened. Add nuts, raisins, and apples (or bananas or pumpkin pureed). Fill greased muffin tins (or use muffin papers). Sprinkle with cinnamon sugar if desired. Bake for 15-17 minutes.
