1. Preheat oven to 350f (180c)
2. Stir together flours, salt, baking powder, baking soda
3. Large bowl, stir the grated apple, carrot, oil, applesauce, both sugars, vanilla and pumpkin spice
4. Add dry ingredients and mix until just blended.
5. Pour batter into prepared loaf pan or muffin tray.
